Caesar Dressing

This is my classic punchy Caesar dressing! It can be used on salads, Chicken burgers or whatever you want. I have kept the recipe to just a dressing primarily so you don’t feel it could only be used on a specific meal. But I also include a little ingredients list of how I have it in a salad, as it is one of my favourite easy meals.
This recipe uses mayonnaise for ease and so that egg-free people can simply replace it with vegan mayo. But feel free to use a couple of egg yolks and oil to make your own.
Ingredients
Caesar Dressing
7 Anchovy fillets in oil
2 Large garlic cloves
1 Lemons Juice
1/2 tbsp Dijon mustard
3 tbsp Parmesan, finely shaved
2 tsp Worcestershire sauce
3 tbsp Mayo
Olive oil
Salad Items
Lettuce
Kale
Chicken
Bacon
Parmesan
Avocado
Bagels/croutons
Caesar Dressing Steps.
STEP 1 Start by chopping and crushing the garlic and anchovies on a chopping board whilst combining together. Beginning to form them into a paste.
STEP 2 Add the dijon mustard and lemon juice onto the chopping board and combine. Further, crushing and combining the ingredients into a paste using the newly added liquid to help.
STEP 3 Add the parmesan and Worcestershire, once again crushing and combining.
STEP 4 Add the paste to a jar or bowl (or whatever you are using to contain your dressing in). Add the mayo and a couple of glugs of olive oil to loosen the consistency.[OR if you are using egg yolks, put into a wide set bowl. Add the olive oil slowly whilst whisking continuously and emulsifying together.]
STEP 5 Taste and season! I tend to only add pepper at this point and avoid salt, as the anchovies are salty enough for me.

Vegan/ Vegetarian options
It is not hard to substitute a couple of ingredients to make this recipe vegetarian or even vegan.
To have a vegetarian version, anchovies can be swapped out for capers. Capers can even be added to the full recipe for an extra kick. I love them. I just wanted to keep the recipe as simple as possible.
For a vegan version, along with the above substitution, we have to alter the mayo and the parmesan cheese. There are plenty of vegan mayo alternatives these days and even plenty of recipes to make your own! For Cheese, again, there are plenty of vegan cheese alternatives, including vegan parmesan. If you don’t have access to any or would prefer something else, you can also use nutritional yeast to taste or leave it out completely. I know that Violfé do a good vegan parmesan, so give that a go. Hellmann’s vegan mayo is pretty unbeatable, in my opinion!
