Spicy Miso Chicken Ramen

This recipe is a delicious, nutritious, heart-warming meal and all I ever want when I am ill. It is not difficult at all! It just requires time to make your broth and get as much goodness in it as possible.
serves 4
Chicken Broth
1 Roasted chicken bones
1 Thumb of ginger peeled
1/2 brown onion
Ramen Broth
1 Thumb of ginger peeled
1/2 Brown onion
4 Garlic cloves
5 Spring onion whites
2 Carrots peeled
2 Tbsp soy sauce
2 Tbsp teriyaki sauce
Chilli sesame oil, to taste. I like 1 1/2 tbsp
2 Tbsp white miso
1.5 Litres of Chicken stock roughly
General Ramen Ingredients
4 Portions Noodle of choice (1 nest of rice noodles per bowl)
4 Egg soft boiled (1 per bowl)
Roast chicken and crispy skin
Spring onion greens
Chilli oil
CHICKEN BROTH:
STEP 1 Pop your roasted chicken bones, onion, and ginger into a large pot, and cover with water. Bring to a simmer and then turn down low and cover. Cook for 2-3 hours if you can!
STEP 2 During this time check your pot every now and then to make sure the chicken is still sufficiently submerged in water. You will most likely want to add some more water as it boils away and the water evaporates.
STEP 3 Once done, sieve away the bones and veggies and reserve all the liquid gold!!!
RAMEN BROTH:
STEP 1 Just as easy as the broth above but with a few more ingredients. Add all ingredients listed under ramen broth above. Don’t worry about too much chopping, just as long as they all fit in your pot. Bring to a gentle simmer, cover and cook for an hour!
RAMEN:
STEP 1 Near the end of your ramen broth’s time on the hob, boil your noodles according to their packet and your soft-boiled egg for 6 minutes for a soft gooey middle. Then arrange your bowl! In this case that is your noodles, chicken, egg and spring onions.
STEP 2 Scoop as much of the golden broth as you wish into your bowl. Decorate with whatever toppings you want (I list some in the notes) and enjoy!!!
Notes.
I like to keep the roast chicken with really simple. I use the cooked chicken meat of course for the ramen but also things like sandwiches the next day! Therefore I keep it simple to keep it versatile.
For constructing your bowl, you can add whatever you want or have. Additions could be gyozas, carrot ribbons, seaweed, kimchi, sesame seeds, etc.; it is very much up to you. This is just a yummy basic selection.
