INGREDIENTS:

Bowl

  • 1 medium sweet potato (250–300g)

  • 150g 5% beef mince

  • ½ onion, chopped

  • 2 cloves garlic

  • 1 tbsp tomato paste

  • 1 tsp cumin

  • 1 tsp paprika

  • ½ tsp oregano

  • ½ tsp garlic granules

  • Chilli flakes, to taste

  • Salt and pepper

  • 2 handfuls spinach (≈50–70g)

  • Fresh parsley

Slaw

  • 1 cup shredded red cabbage (≈100g)

  • Juice of ½ lime

  • 2 tbsp full-fat yoghurt

  • Parsley

  • Pinch of salt

To serve

  • 100g cottage cheese



METHOD:

  1. Roast the sweet potato at 200°C until soft (around 40–50 minutes).

  2. Cook the onion until soft, then add garlic and chilli.

  3. Add the beef mince and cook until browned.

  4. Stir in tomato paste, spices, salt, and pepper.

  5. Add spinach and let it wilt. Finish with parsley.

  6. Mix the cabbage with lime juice, yoghurt, parsley, and salt.

  7. Slice open the sweet potato and top with beef, slaw, and cottage cheese.
