1 medium sweet potato (250–300g)
150g 5% beef mince
½ onion, chopped
2 cloves garlic
1 tbsp tomato paste
1 tsp cumin
1 tsp paprika
½ tsp oregano
½ tsp garlic granules
Chilli flakes, to taste
Salt and pepper
2 handfuls spinach (≈50–70g)
Fresh parsley
Slaw
1 cup shredded red cabbage (≈100g)
Juice of ½ lime
2 tbsp full-fat yoghurt
Parsley
Pinch of salt
To Serve
100g cottage cheese
Method
Preheat your oven to 200°C. Roast the sweet potato until soft, which should take around 40–50 minutes.
While that’s roasting, cook the chopped onion in a pan until it’s soft. Then, add the minced garlic and a sprinkle of chilli flakes.
Next, toss in the beef mince. Cook it until it’s nicely browned.
Stir in the tomato paste along with the cumin, paprika, oregano, garlic granules, salt, and pepper. Let those flavours mingle!
Add the spinach to the pan and let it wilt down. Finish it off with a sprinkle of fresh parsley.
For the slaw, mix the shredded cabbage with lime juice, full-fat yoghurt, parsley, and a pinch of salt.
Once the sweet potato is done, slice it open. Top it with the beef mixture, slaw, and a generous dollop of cottage cheese.
