Steak & Chimichurri Protein Bowl

This bowl was built to cover all the nutritional bases in one go. Per serving it has around 55g of protein, plus 14g of fibre. The combination of animal and plant protein means you get a complete amino acid profile. It's also a genuinely iron-rich meal. Filling, balanced, and ready in 35 minutes.

A few things worth knowing:

  • The chimichurri keeps well in the fridge for a few days and tastes better once the garlic has mellowed a little.

  • Because this uses shredded cabbage rather than lettuce, you can dress the whole bowl and keep it in the fridge. It won't go soggy, making it a genuinely good meal prep option.

INGREDIENTS:


Bowl

  • 3 × 225g sirloin steaks

  • 570g queen chickpeas, drained

  • 220g sugarbelle cherry tomatoes, halved

  • 198g sweetcorn, drained

  • ⅔ cucumber, roughly chopped

  • 1 large avocado, cubed

  • 150g feta, crumbled

  • 40g rocket

  • 3 spring onions, sliced

  • ½ red onion, thinly sliced

  • ⅕ white cabbage, finely shredded

Chimichurri Dressing

  • 3 large garlic cloves, minced

  • 4 tbsp extra virgin olive oil

  • 2½ tbsp red wine vinegar

  • ½ tbsp honey

  • 1 fresh red chilli, finely sliced

  • Large handful flat-leaf parsley, chopped

  • Salt and black pepper


METHOD:


1. Start with the chimichurri. Mix the garlic, chilli, parsley, olive oil, vinegar, and honey together and season well. Leave it to sit while you get everything else ready, it improves as it rests.

2. Build the base. Shred the cabbage into a large bowl and add the chickpeas, sweetcorn, cucumber, tomatoes, spring onions, and red onion. Toss together.

3. Cook the steaks. Pat them dry and season well on both sides. Get a pan really hot, you want it smoking, and cook for about 3 minutes each side for medium-rare. Leave them to rest on a board for 5 minutes, then chop into bite-sized cubes.

4. Toss everything together. Add the steak cubes, avocado, feta, and rocket to the bowl. Pour over the chimichurri and toss everything together so it's all well coated. Eat straight away.
