Ingredients


Bowl

  • 3 × 225g sirloin steaks

  • 570g queen chickpeas, drained

  • 220g sugarbelle cherry tomatoes, halved

  • 198g sweetcorn, drained

  • ⅔ cucumber, roughly chopped

  • 1 large avocado, cubed

  • 150g feta, crumbled

  • 40g rocket

  • 3 spring onions, sliced

  • ½ red onion, thinly sliced

  • ⅕ white cabbage, finely shredded


Chimichurri Dressing

  • 3 large garlic cloves, minced

  • 4 tbsp extra virgin olive oil

  • 2½ tbsp red wine vinegar

  • ½ tbsp honey

  • 1 fresh red chilli, finely sliced

  • Large handful flat-leaf parsley, chopped

  • Salt and black pepper


Method


1. Start with the chimichurri. Mix the garlic, chilli, parsley, olive oil, vinegar, and honey together. Season well. Leave it to sit while you get everything else ready; it improves as it rests.


2. Build the base. Shred the cabbage into a large bowl. Add the chickpeas, sweetcorn, cucumber, tomatoes, spring onions, and red onion. Toss everything together.


3. Cook the steaks. Pat them dry and season well on both sides. Get a pan really hot—you want it smoking! Cook for about 3 minutes on each side for medium-rare. Leave them to rest on a board for 5 minutes, then chop into bite-sized cubes.


4. Toss everything together. Add the steak cubes, avocado, feta, and rocket to the bowl. Pour over the chimichurri and toss everything together so it's all well coated. Enjoy your meal straight away!
