570g queen chickpeas, drained
220g sugarbelle cherry tomatoes, halved
198g sweetcorn, drained
⅔ cucumber, roughly chopped
1 large avocado, cubed
150g feta, crumbled
40g rocket
3 spring onions, sliced
½ red onion, thinly sliced
⅕ white cabbage, finely shredded
Chimichurri Dressing
3 large garlic cloves, minced
4 tbsp extra virgin olive oil
2½ tbsp red wine vinegar
½ tbsp honey
1 fresh red chilli, finely sliced
Large handful flat-leaf parsley, chopped
Salt and black pepper
Method
1. Start with the chimichurri. Mix the garlic, chilli, parsley, olive oil, vinegar, and honey together. Season well. Leave it to sit while you get everything else ready; it improves as it rests.
